Italian Pastry Culture in Bangkok

On the occasion of the XI Week of Italian Cuisine in the World, the Italian Cultural Institute Bangkok hosted an exclusive workshop dedicated to an iconic Roman classic, elevated by the excellence of PGI Modica Chocolate and tailored for a group of Italian pastry enthusiasts.

In collaboration with 357°F Baking Studio and the Modica Chocolate PGI Consortium, the Italian Cultural Institute Bangkok organized a special day of training and cultural sharing centered on the traditional Roman Maritozzo.

Held on November 4, 2026, as part of the 11th Week of Italian Cuisine in the World celebrations, the event provided a meaningful platform for intercultural dialogue and exchange through the art of pastry.

Roman Tradition Meets PGI Sicilian Chocolate
The session was led by Chef Thanawat “Save” Choopraserdchok (noted for his background on MasterChef and at Le Cordon Bleu Dusit), who guided participants through key techniques in proofing, dough preparation, and filling. Enhancing the traditional recipe was the addition of prestigious PGI Modica Chocolate—a flagship product from Sicily renowned for its cold-processing method and signature granular texture.

An Educational Experience of Shared Culture
Conceived as an experiential journey of shared learning, the exclusive workshop was limited to just 10 participants. Local students and food lovers had the opportunity to discover the rich history behind the Maritozzo, gain insight into Italian Protected Geographical Indication (PGI) standards, and appreciate the value of safeguarding culinary heritage.
